5 Grab and Go Healthy Breakfasts

I wake up starving every day. If I don’t eat fairly quickly, I get grumpy. Three days of the week, I get up at 5am to teach a Megaformer Pilates class in Plano, a high-energy, high-enthusiasm job that doesn’t go well with “grumpy”. My goal is always to get out the door as quickly as possible, enabling me to sleep a few precious seconds longer. I’m sure all of us mothers have the same goal, no matter where we’re headed in the morning! Today I’m excited to share with you my list of five healthy grab-and-go breakfasts with zero prep or that can be prepared the night before.

Fruit. This seems obvious, but you need to a) have fruit in the house, and b) wash and/or cut it up so that it’s ready to go. My favorite is a banana because there is no prep! It’s not much by itself, but it’s great before a strenuous workout because it’s not too heavy. To add protein, grab a squeezable nut butter packet (you can buy locally at Whole Foods, Sprouts, or Natural Grocer). An orange is also a great energy boost before and/or after a workout.

Refrigerator oatmeal. I found this recipe from The Yummy Life on Pinterest, and you can repin it from my Dallas Moms Blog Pinterest board. You put following ingredients into a mason jar to soak and combine overnight: greek yogurt, milk, oats, chia seeds, peanut butter, and your choice of fruit. My favorite is the peanut butter banana. When you wake up in the morning, grab the jar with a spoon and head out.

Microwaved egg in a mug. It sounds weird, but even a chef on NPR recently confirmed that you can make a pretty tasty egg in the microwave using a coffee mug. Here’s what I do: one egg, a sprinkle of shredded mozzarella cheese, and a splash of milk. All microwaves are different, but I set mine for 1 minute and 40 seconds. The egg will puff up above the mug and then recede. I top mine with salt and pepper. Take the mug and a fork with you on the road!

Homemade muffin. I like to make a large batch of muffins from scratch and freeze them instead of buying a mix or prepackaged muffins. Both the mix and the pre-made muffins contain a lot of really undesirable additives, preservatives, sugar, and often trans fats. Your body doesn’t need these things! Muffins are a food that freeze really well, so all you have to do is take a muffin out of the freezer the night before and it is good to go for the next morning. My favorite recipe is actually the one for Banana Bread that comes on the back of the bag of overripe bananas.

Microwave muffin in a mug. In case you don’t have time to make and freeze muffins ahead of time, I have tried and like this microwave muffin recipe from Blogilates. The ingredients are simple and you can change them around: 1 egg, quick cooking oats, frozen berries, and brown sugar. I have added milk to mine for additional moisture. Microwave for around 1 minute (check the video on the recipe site) in coffee mug. It looks strange but tastes good!

These quick meals have been a lifesaver for my state of mind and energy levels in the morning!
