We are a Costco family. The thing I love about Costco is I can go in and load up on the things I like to keep a stockpile of (toilet paper, paper towels, paper plates, WINE, etc) as well as produce, milk and other daily items. 5 Simple Weeknight Meals using Kirkland Signature Products

Here are five simple weeknight meals I am sure will appeal to even the pickiest of eaters. Pick up some Kirkland Signature paper plates and you won’t even have to do the dinner dishes!

Costco has the best 3-pound rotisserie chicken for $4.99 – no preservatives, MSG free, gluten free, and USDA grade. Add a side of Kirkland frozen vegetables and some warm bread from the bakery and you have yourself a nice little dinner. Of course, what would dinner be without a cup of cold Kirkland organic milk for the kids…and Kirkland Pinot Grigio for the parents.

The best part of the $4.99 chicken is it will last for 2 meals in our house. Now, I have two little gals who don’t eat a ton, so adjust accordingly. Depending on family size, you may need a second chicken. Pull the remaining chicken and cook into a quesadilla with Kirkland Signature cheddar cheese and any additional veggies your family enjoys. We like to have sliced avocados and black beans on the side. And I am loving the Kirkland Golden Margarita!

Its the middle of the week and one of those nights where your spouse is working late, kids have soccer AND dance, and no one has started their homework. Basically, you need a meal thats easier than take out. Enter: Kirkland Lasagna. Heat oven. Remove plastic. Cook. Serve. It could not be easier to have a lasagna that tastes like you have worked for hours in the kitchen preparing it. Serve with a side of salad, some warm bread and a (much deserved) glass of Kirkland Malbec and you are set!

The Kirkland bags of individually frozen chicken breasts are an absolute staple in my house. They are already pre-trimmed and ready to go. There is no need to thaw before cooking, but I like to quickly thaw a few in the sink and toss them in a bowl with some Soy Vey marinade (another Costco staple we always have on hand). Grill and serve with another Kirkland frozen vegetable blend. Such an easy meal! Tip: this one is great for lunch leftovers so I like to make an extra serving or two for my husband and I to have the next day.

This is basically my favorite meal because, well, pizza. These frozen Kirkland pizzas are not the frozen cardboard pizzas you remember from college. These are really tasty, crispy, delicious and pair nicely with just about any Kirkland wine. And its the end of the week…how about some ice cream? 


Bonus Night – Ham Dinner

costco-dinner-ham-potatoes-and-wineThis is one of my family’s favorite meals. It’s so incredibly easy and generally lasts us two nights and possibly an additional lunch. Kirkland Signature dinner ham comes pre-cooked and just needs to be warmed up. The au gratin potatoes can be cooked in the microwave or the oven and canned green beans just need warming and a touch of seasoning.
